The Purple Line
The Purple Line is made up of wicked thin cutlets (eggplant recommended), arugula, roasted red vinegar peppers, eggplant caponata, and a burrata and basil spread. This sandwich was entirely developed by Tommy. He named this sandwich as a tribute to Matt and Ryan in remembrance of their time spent at Lowell where they attended Umass, founded Paisani, and brought their idea of an Italian food truck to life in the streets of Boston. The Purple Line is one of the MBTA’s most consistent tracks, and this sandwich is no different for Paisani.
A Paisan is known as a fellow countryman. This gives us our name, Paisani, two Italian-American friends living our dream.
We combine traditional preparations with local ingredients for dishes that are authentic to both their Italian origins and Boston setting.
At Paisani we take Italian classics and add an American twist, without forgetting the history of the product.
