Our Story

Paisani was co-founded by two friends who graduated from the University of Massachusetts, Lowell. After studying four years in engineering and business, Matthew Minichiello of Canton and Ryan Palmer of Medford decided to dive into an entrepreneurial opportunity by starting a business to fill the void of an Italian food truck in the Boston area. The two friends have been creating innovative dishes together during their time spent at Lowell cooking for friends and family on occasions such as homecoming, the Super Bowl, and graduation. They have creatively positioned themselves in the Boston food truck market by combining their culinary skills with their outgoing personalities. 

Paisani’s food truck has been open since the Summer of 2022 and as the business continues to grow, the quality and quantity of the food remains the same. Growing up in Italian-American households, Matt and Ryan know just how important it is to have a top-of-the-line sandwich shop near by; making Paisani, the mobile food truck serving Boston’s best sandwiches, a must have in the city offering something for everybody in a variety of neighborhood locations. Unable to make it to the food truck? That’s okay, too. Paisani offers a top of the line catering experience whether that be traditional catering or booking the food truck for your next event. The owners work with each client on a need by need basis; from the booking to the serving details, we strive to create a seamless, trustworthy experience for our customers to facilitate the stressful nature of event planning.

Paisani’s mission is to make each customer experience a memorable one. The Paisans work to display their commitment to good eats while serving and supporting the entire community in Boston. Not only is the food consistent and plentiful, the customer service is unrivaled as the two owners of the business are on site day in and day out putting their best foot forward; no matter who steps up to the window. Since the airing of Season 16 of the Great Food Truck Race, we have experienced continuous love from all over the country. The team appreciates the fans who have traveled to come eat and meet with the Paisans. The food truck has become a destination for Boston visitors. What better way to kick off a trip to Bean Town than a Drunken Parm?

Matt and Ryan feel grateful to have an opportunity to run a food truck in the best city in the world - Boston is ‘Title Town’, after all. From the blue collar workers who continue to build this city from the ground up to the corporate folks who make up over seventy five percent of our daily customer base, the boys appreciate the endless support in a city that can sometimes feel challenging to navigate a business through. The team has a saying on the truck that goes, “nothing stops the Paisans” signifying the resilience to the difficulties that are throw at them day in and day out. Their determination and perseverance is evidently rooted in Boston, itself. Paisani is founded on hard work, great food, and undeniably excellent customer service. Meet The Team

Matthew Minichiello, Co-Founder and Owner

Matthew Minichiello is a highly driven individual who enjoys challenging himself to be the best in everything he does. He comes from an Italian background where he grew up making homemade meatballs and the famous Minichiello’s Limoncello with his grandparents. He actively cooks for his family and friends each Sunday and looks to bring some of his home experiences to the beloved people of Boston. Minichiello has recently joined the team at Capo restaurant in South Boston to gain more experience in the restaurant and food industry, and maybe learn a trick or two in the kitchen. 

Ryan Palmer,  Co-Founder and Owner

Ryan Palmer is an experienced employee in the hospitality industry. He has proven himself to be a dedicated and hardworking individual in his five years experience at Salvatore’s restaurant of Medford Square. He enjoys catering to friends and family on holidays and special occasions and is no stranger to preparing food for parties as big as 30, 50, or even 100 people. Palmer hopes to share his joy for cooking with others through his creative takes on Italian classics. 

Thomas Southwick, Manager

Thomas Southwick joined the team just a few months after the opening of the Paisani Food Truck. He works endless hours to help Paisani bring the highest quality and quantity to our customers. Similarly to Ryan, Southwick worked at Salvatore’s of Medford for nearly 6 years gaining practical industry experience which he demonstrates daily in the prep kitchen and on the road. His value is immeasurable as a well-driven, trustworthy employee.
